    Avocado as a “good fat” butter substitute

    Avocados are a “superfood” that allow for a healthy substitute for virtually any saturated animal fat.  It may take some experimenting to get it just right but here is an avocado puree recipe that I regularly use:

    • 1 avocado
    • 1 tablespoon fresh cilantro, chopped
    • 1 -1 1/2 teaspoon fresh lime juice
    • 1 teaspoon extra virgin olive oil [you may also use sesame oil, walnut oil, or avocado oil (not toasted sesame oil)
    • 1/4 garlic clove, minced
    • 1 teaspoon jalapeno pepper, minced [for those who live on the spicy side]
    • kosher salt
    • fresh ground black pepper
