    Three Ingredient “Energy Breakfast Cookies”

    How many times have you woke up only to rush out the door without any breakfast? When you want to grab something quick usually the options are not that healthy…we got you covered. This easy 3 ingredient recipe for breakfast cookies is not only easy to make but is also packed with all the good things needed to start your day.

    Here is what you will need:

    • 2 medium ripe bananas
    • 1 cup of rolled oats
    • 1/4 cup dried currants (or any dried fruit of your choice, blueberries work great too!)

     

    Here is how you will do it:

    1. Preheat oven to 350 degrees and cover a baking sheet with parchment paper or non-sticking foil
    2. In a large bowl mash the bananas and combine with the oats
    3. Fold in the currants (or any other dried fruit you wish)
    4. Using a 1 tablespoon measure drop the cookies on the prepared baking sheet
    5. Bake at 350 degrees for 10-12 minutes or until the bottoms are golden down
    6. Serve and enjoy 🙂
